For this version, I wanted to take a classic after school snack and give it a little extra magic.

The secret is using homemade biscuit dough instead of refrigerated dough. It creates a buttery, flaky bite that feels just a little more special while still being simple enough for a busy weekday. Brushed with garlic butter and sprinkled with Parmesan, these Pizza Bites are comforting, satisfying, and disappear almost as quickly as they come out of the oven.

This recipe is perfect for lunches, movie nights, game days, or those evenings when everyone wants pizza without waiting for delivery. Pair them with a glass of iced tea or your favorite sparkling lemonade and enjoy with your current read.


Ingredients

Pizza Bites

For the Biscuit Dough

  • 2 cups all purpose flour

  • 1 tbsp baking powder

  • 1 tsp salt

  • 1 tbsp granulated sugar

  • 6 tbsp cold butter, cubed

  • ¾ cup cold whole milk

For the Filling

  • ½ cup pizza sauce

  • 1½ cups shredded mozzarella cheese

  • ¼ cup grated Parmesan cheese

  • 20 to 25 slices pepperoni, chopped

  • 1 tsp Italian seasoning

Garlic Butter Topping

  • 2 tbsp butter, melted

  • ½ tsp garlic powder

  • 1 tbsp grated Parmesan cheese

  • 1 tsp dried parsley

Instructions


1. Prepare the Pan

Preheat the oven to 375°F. Grease or line a standard 12 cup muffin pan.

2. Make the Biscuit Dough

In a large bowl, whisk together the flour, baking powder, salt, and sugar.

Cut the cold butter into the flour mixture until it resembles coarse crumbs.

Pour in the cold milk and gently stir until a soft dough forms. Be careful not to overmix.

3. Fill the Pizza Bites

Divide the dough into 12 equal portions.

Flatten each piece into a circle and gently press it into the muffin cups, creating a small bowl.

Spoon about 1 teaspoon of pizza sauce into each cup.

Top with mozzarella, Parmesan, chopped pepperoni, and a sprinkle of Italian seasoning.

Fold the dough slightly around the filling. It doesn't need to completely seal. A little bubbling cheese is part of the charm.

4. Add the Garlic Butter

Mix together the melted butter and garlic powder.

Brush the tops of each pizza bite with the garlic butter, then sprinkle with Parmesan and parsley.

5. Bake

Bake for 18 to 22 minutes, or until the biscuits are golden brown and the cheese is bubbly.

Allow the Pizza Bites to cool in the pan for about 5 minutes before carefully removing them.

Serve warm with extra pizza sauce or marinara for dipping.


A Few Helpful Tips

Keep the butter cold when making the biscuit dough. Cold butter creates flaky, tender layers.

How to Store Them

Store leftover Pizza Bites in an airtight container in the refrigerator for up to four days.

Reheat them in the oven or air fryer until warmed through for the crispiest texture. They can also be microwaved for a quick snack, though the biscuits will be a little softer.

These freeze well too. Freeze completely cooled Pizza Bites in a freezer safe bag for up to three months. Reheat directly from frozen in a 350°F oven until heated through.
