Warm cinnamon, caramelized bananas, a buttery crumb topping, and a sweet, caramelized banana glaze come together in this cozy banana bread. It has all the nostalgic cinnamon sugar flavor of Cinnamon Toast Crunch, but you do not need any cereal to make it.
For this version, I wanted to take a classic banana bread and give it a little extra magic.
The secret is caramelizing the bananas before mashing them. Cooking the bananas with a little butter and sugar deepens their natural sweetness and gives the bread a richer flavor. The cinnamon crunch topping adds a buttery layer to every bite, while the caramelized banana glaze takes it to another level.

Ingredients
Banana Bread
3 ripe bananas
1/2 cup butter, melted and divided
3/4 cup granulated sugar, divided
1/2 cup plain Greek yogurt
2 large eggs
1 tsp vanilla extract
1.5 cups all purpose flour
1 tsp baking soda
1 tsp ground cinnamon
Cinnamon Crunch Topping
1/4 cup butter, melted
1/4 cup granulated sugar
1/2 cup all purpose flour
1 tsp ground cinnamon
Banana Caramel Frosting
1/2 cup powdered sugar
1-2 tbsp reserved banana caramel
1-2 tsp whole milk as needed
Instructions
1. Prepare the Pan
Preheat the oven to 350°F. Line a standard loaf pan with parchment paper and lightly grease the exposed sides.
2. Caramelize the Bananas
Peel the bananas and slice them lengthwise.
Take 1 tablespoon of butter and 1 tablespoon of sugar from the amounts measured for the banana bread. Add them to a skillet over medium heat.
Once the butter and sugar begin to bubble, place the bananas cut side down in the skillet. Cook for 2 to 3 minutes, or until golden and caramelized. Carefully flip the bananas and cook for another minute.
Transfer the caramelized bananas to a large mixing bowl. Spoon 1 tablespoon of the banana caramel remaining in the skillet into a separate small bowl and reserve it for the frosting. Scrape any remaining caramel into the bowl with the bananas.
Allow the bananas to cool slightly, then mash until mostly smooth.
3. Make the Batter
Add the remaining melted butter and sugar to the mashed bananas. Mix until combined.
Add the Greek yogurt, eggs, and vanilla extract. Mix until everything is fully incorporated.
Add the flour, baking soda, and cinnamon. Gently fold the ingredients together just until no dry streaks remain. Avoid overmixing.
4. Make the Cinnamon Crunch Topping
In a separate bowl, combine the melted butter, sugar, flour, and cinnamon. Mix until a crumbly topping forms.
5. Assemble and Bake
Pour the banana bread batter into the prepared loaf pan and spread it evenly.
Sprinkle the cinnamon crunch topping over the batter. Gently press a few of the crumbs into the surface so they stay in place as the bread rises.
Bake at 350°F for approximately 45 minutes. The bread is finished when the center is set and a toothpick inserted near the middle comes out clean or with a few moist crumbs.
If the topping begins to brown too quickly, loosely cover the loaf with aluminum foil.
Allow the bread to cool in the pan for 15 minutes. Transfer it to a cooling rack and let it cool completely before adding the frosting.
6. Make the Caramelized Banana Frosting
Whisk the reserved banana caramel and confectioners’ sugar together.
Add the milk ½ teaspoon at a time, whisking after each addition, until the frosting is thick but easy to drizzle. Use closer to 1 teaspoon for a thicker frosting or up to 2 teaspoons for a thinner glaze.
Drizzle the frosting over the completely cooled banana bread. Allow it to set before slicing and serving.
A Few Helpful Tips
Use very ripe bananas with plenty of brown spots for the strongest banana flavor. Let the caramelized bananas cool slightly before adding the eggs so the heat does not begin cooking them.
Be careful not to overmix the batter after adding the flour. Fold everything together only until you no longer see dry streaks.
Allow the bread to cool before adding the icing. If the loaf is still warm, the icing will melt and soak into the topping instead of creating a pretty drizzle.
How to Store It
Store the banana bread in an airtight container at room temperature for up to two days. For longer storage, keep it covered in the refrigerator for up to five days.
You can enjoy it chilled, allow it to return to room temperature, or warm an individual slice briefly before serving.
